
Yield: 30 mini cookie cups
Ingredients:
110g butter (room temperature)
80g brown sugar
50g fine sugar
1 egg
1/2 tsp vanilla essence
1/2 tsp soda bicarbonate
1/2 tsp fine salt
195g all purpose flour
50g smooth peanut butter
Method:
1) Preheat your oven at 190C.
2) Cream butter together with brown sugar and fine sugar in the mixing bowl until fluffy.
3) In another bowl, whisk egg, vanilla essence, soda bicarbonate and fine salt. Add in the mixture into the mixing bowl.
4)Add in flour and mix them until well incorporated.
5) Add in smooth peanut butter and mix the dough thoroughly.
6) Grease a mini cookie tray with butter or oil.
7) Scoop about 1 1/2 tsp of the dough in each hole and press the dough.
8) Bake for 15-20 minutes at 150-160C or until the cookies get golden brown.
9) Take the cookies out from the oven and gently press the middle with a teaspoon and let them cool on the cooling rack.
10) Fill up the middle of those cookies with Nutella and sprinkle some crushed peanuts on top of them.
